It’s really easy to make these sweet drop biscuits! You start by mixing together the dry ingredients. So when you add the liquid to the dry ingredients, you want to only mix until it’s evenly moistened. It’s important to mix the dough as little as possible, because overworking the dough can result in tough biscuits. This creates smaller pieces of butter that are easier to work into the flour without overworking the dough. I recently discovered a simple hack that makes this process so much easier, and that is grating the cold butter! I simply take the stick of butter and grate it with my box grater, just as I would grate a block of cheese. This allows the dough to be cold when it goes into the oven, which helps the outside crisp up a bit and helps the biscuit not go flat.Ī lot of recipes call for cold butter cut into cubes, which you then work with a pastry blender or food processor in order to cut the butter into the flour.
